What do you do if you have a lot of herbs growing in your balcony, patio or garden? I love to use them in marinates. This time it is cheese, in fact Feta cheese cut in cubes and put together with fresh oregano, rosemary and thyme sprigs, a couple of sage leaves, hot chili pepper, garlic and good olive oil in a jar. Forget about it for a couple of days and then open to serve a tangy appetizer full of flavors.
The Feta has to be firm and it makes no difference if it is of sheep milk, cow milk or a combination of two. It’s a mater of taste.
Please, use robust fresh herbs like thyme, rosemary, oregano and sage and not soft ones like basil or chives. The first will keep their shape and aroma, while the second category will look and taste bland when soaked in olive oil for longer than one hour.
I also do not chop the herbs. I leave the sprigs as a whole apart from tearing a couple of leaves.

I normally put fill the jar in layers: a layer of feta, sprinkle with herbs, garlic and hot chili pepper and repeat until ingredients finished. I pour the olive oil at the end.
Extra virgin oil is best but other good olive oils would do too.
Store in a dark place or in the fridge. I let my jars in the fridge. Full flavors are developed after 5-7 days.
You can use the olive oil in a salad: preferably tomato or Choriatiki Greek Salad. Or strain it through a cheese cloth and marinate meat and poultry for the BBQ. Unless you don’t mind the tiny cheese particles in the oil.
Tip for Vegans: I suppose you can marinate tofu in a similar way but possible you have to consume earlier than 7 days.
Feta Cheese marinated with fresh Herbs, Hot Chili Pepper, Garlic and Olive Oil
- 250 gr Feta cheese cut in cubes
- 2 sprigs fresh oregano
- 2 sprigs fresh rosemary
- 4-5 sprigs fresh thyme
- 5-6 fresh sage leaves
- 2-3 garlic cloves cut into thick slices
- 1 red hot chili pepper – cut in slices, remove kernel
- 250 gr (one cup) olive oil
- Put 1/3 of feta cubes in a jar.
- Sprinkle with 1/3 of herbs, chili pepper and garlic.
- Repeat until the ingredients are finished.
- Pour over the olive oil.
- Stir carefully with a wooden spoon.
- Close the jar and store it in a dark place or in the fridge.
- Full flavor develop after 5 to 7 days.
