Fried Chicken Liver with fresh Figs, Sage and Balsamic glaze

  • 4 chicken liver – fat removed
  • flour for dusting
  • 1 1/2 tablespoon olive oil
  • Salt and pepper
  • 1 + 1 tablespoon rich balsamic glaze
  • 2 tablespoon chopped sage (fresh or dry)
  • 3 fresh figs peeled
  • 8 slices baguette
  • 1 teaspoon finishing salt (flakes or tick-grained)


  1. Wash the chicken liver and pat them dry.
  2. Dust them with flour.
  3. In a pan, heat the olive oil.
  4. Add the chicken liver.
  5. Fry each side 4 minutes and flip.
